Chiltepín Dark Chocolate

The chiltepín is the only chili pepper native to the United States, growing wild across the borderlands of the Sonoran Desert and the Sierra Madre Occidental — small, round, and fierce, with a heat that arrives fast and fades cleanly, leaving the pepper's bright fruit notes behind. Honored in the Slow Food Ark of Taste for its cultural and ecological significance, it has fed and flavored this region for thousands of years. We source ours from areas protected by the Northern Jaguar Project, an organization working to preserve North America's northernmost jaguar habitat in the Sierra Madre, where chiltepín grows as it always has — wild and unharvested until it isn't.
Ingredients & Allergens
Cocoa Beans, Cocoa Butter, Unrefined Cane Sugar, Chiltepín
Made in a facility that handles tree nuts, wheat, milk, eggs and peanuts. May not be suitable for people with allergies to these foods.
Craft Notes
Whole dried chiltepíns are ground and infused directly into cocoa butter over an extended period, extracting both heat and the pepper's distinctive fruity character. We produce the chocolate base separately — a clean two-ingredient dark chocolate — then incorporate the infused cocoa butter at the time of molding. Keeping the chili out of the melanger protects our equipment and, more importantly, gives us precise control over spice level while preserving the fruit notes that make chiltepín worth using in the first place.

Traceable and responsible ingredients
We believe that establishing a sustainable and traceable supply chain should be a baseline standard for any business, but especially when working in an industry that is still wrought with human rights abuses and corruption.
