Chiltepín Milk Chocolate

The chiltepín is the only chili pepper native to the United States, growing wild across the borderlands of the Sonoran Desert and the Sierra Madre Occidental — small, round, and fierce, with a heat that arrives fast and fades cleanly, leaving the pepper's bright fruit notes behind. Honored in the Slow Food Ark of Taste for its cultural and ecological significance, it has fed and flavored this region for thousands of years. We source ours from areas protected by the Northern Jaguar Project, an organization working to preserve North America's northernmost jaguar habitat in the Sierra Madre, where chiltepín grows as it always has — wild and unharvested until it isn't.

Ingredients & Allergens

Contains Dairy (Milk)

Cocoa Beans, Cocoa Butter, Unrefined Cane Sugar, Milk Powder, Chiltepín

Made in a facility that handles tree nuts, wheat, milk, eggs and peanuts. May not be suitable for people with allergies to these foods.

Craft Notes

Whole dried chiltepíns are ground and infused directly into cocoa butter over an extended period, extracting both heat and the pepper's distinctive fruity character. The milk chocolate base dampens the perception of spice, so we boost the infusion rate for this bar to compensate — the result lands at a similar heat level to the dark version, just cushioned differently by the milk. The infused cocoa butter is added at the time of molding, keeping the chili out of the melanger and giving us precise control over the final spice level.

Care & Storage

Our milk chocolate bars are best consumed within 12 months of the manufacture date, and you can find this information printed on the back of the package itself. It is best stored between 65 and 70°F, away from direct sunlight, and protected from moisture. We don't recommend refrigerating our products unless absolutely necessary. If you choose to refrigerate, please make sure to store in an airtight container and allow cold products to come to room temperature before consuming.

Shipping & Returns

Shipping

All orders ship from our Monsoon Chocolate shipping hub in Truth or Consequences, New Mexico. We ship Monday and Tuesday through USPS or UPS to help prevent packages from sitting in transit over the weekend. During summer months, all orders ship via expedited service through UPS or USPS Express in a deluxe insulated liner with cold packs, arriving within 4-10 days of ordering. Summer shipping is a flat rate of $25. At this time, we cannot ship to PO boxes or APO addresses.

Returns

Because our products are perishable, we cannot accept returns. If your order arrives in less than ideal condition or something is not as expected, please contact us and we will review your concern with care.

Traceable and responsible ingredients

We believe that establishing a sustainable and traceable supply chain should be a baseline standard for any business, but especially when working in an industry that is still wrought with human rights abuses and corruption. We are dedicated to driving positive change through responsible purchasing, and through establishing long term relationships with our producer-partners.
