Mesquite White Chocolate
Couldn't load pickup availability
Three varieties of mesquite are native to the Sonoran Desert, and the pods they produce have fed people in this region for thousands of years. When toasted, the dried pods develop a flavor that reads somewhere between roasted nut and dark caramel — complex in a way that has nothing to do with added sweetness. We incorporate mesquite as a flour into a white chocolate base built from single-origin Peruvian cocoa butter, where it finds a natural home alongside milk and unrefined cane sugar.

Craft Notes
We source our mesquite flour from the San Xavier Co-op Farm, which employs tribal members to wild-harvest pods from desert trees, sun-dry them whole, and mill them on a hammer mill on site. San Xavier operates on the Tohono O'odham Nation just south of Tucson, one of the few places in the region where mesquite harvesting has remained a continuous cultural and agricultural practice. The flour is toasted before being incorporated into the chocolate, which deepens the caramel and nutty character and integrates it fully into the white chocolate base.
