Blue Corn Atole White Chocolate

 

Blue corn has been central to Pueblo foodways in the Rio Grande valley for centuries, ground into masa, brewed into atole, carried through generations as both sustenance and ceremony. We work with Tamaya Blue, the stone-milled blue corn brand of the Santa Ana Pueblo, whose mill in New Mexico processes heirloom varieties using traditional methods. Folded into a white chocolate base, the corn brings a quiet, almost savory depth — custard and sweet corn on the surface, with a faint floral quality underneath that lingers.

Craft Notes

Atole is a traditional Mesoamerican beverage made from toasted corn or masa, water or milk, and unrefined sugar — thick, warming, and deeply rooted in the foodways of the Southwest. This bar takes that reference point and refines it into chocolate form. The blue corn is worked into the white chocolate base at a grind fine enough to integrate fully while retaining just enough texture to register on the palate. Purple pea flower provides the subtle violet tint. The Santa Ana Pueblo no longer farms the corn directly but partners with regional growers and operates the Santa Ana Grain Mill, where the stone milling happens.

Care & Storage

Our white chocolate bars are best consumed within 12 months of the manufacture date, and you can find this information printed on the back of the package itself. It is best stored between 65 and 70°F, away from direct sunlight, and protected from moisture. We don’t recommend refrigerating our products unless absolutely necessary. If you choose to refrigerate, please make sure to store in an airtight container and allow cold products to come to room temperature before consuming.

Shipping & Returns

Shipping

All orders ship from our Monsoon Chocolate shipping hub in Truth or Consequences, New Mexico. We generally ship Monday through Wednesday through USPS or UPS to help prevent packages from sitting in transit over the weekend. A flat rate of $16 applies to standard shipping. At this time, we cannot ship to PO boxes or APO addresses.

Returns

Because our products are perishable, we cannot accept returns. If your order arrives in less than ideal condition or something is not as expected, please contact us and we will review your concern with care.
