Bejofo Estate MADAGASCAR 64% Dark Milk Chocolate

The Sambirano Valley in northwest Madagascar is one of the most celebrated cacao-growing regions on earth, producing beans with a citrus brightness and aromatic complexity that is immediately recognizable and nearly impossible to replicate elsewhere. Bejofo Estate is part of the larger Akesson Estate, managed by Bertil Akesson, who has spent decades cultivating fine cacao alongside pepper and spices in this corner of Madagascar. The cacao carries an Heirloom designation from the Heirloom Cacao Preservation Initiative — recognition reserved for varieties with demonstrated fine flavor and genetic significance. We process it as a 64% dark milk, a format that softens Madagascar's characteristic acidity just enough to let the full aromatic range come forward.

Craft Notes

Akesson's operation is among the most respected single-estate producers in the fine chocolate world, farming organically across 300 tons of cacao annually with a consistency that is rare at that scale. The dark milk format — lower in sugar than a traditional dark bar, richer than a conventional milk chocolate — suits this origin particularly well, tempering the bright citrus notes while preserving the complexity underneath.

Care & Storage

Our milk chocolate bars are best consumed within 12 months of the manufacture date, and you can find this information printed on the back of the package itself. It is best stored between 65 and 70°F, away from direct sunlight, and protected from moisture. We don’t recommend refrigerating our products unless absolutely necessary. If you choose to refrigerate, please make sure to store in an airtight container and allow cold products to come to room temperature before consuming.

Shipping & Returns

Shipping

All orders ship from our Monsoon Chocolate shipping hub in Truth or Consequences, New Mexico. We generally ship Monday through Wednesday through USPS or UPS to help prevent packages from sitting in transit over the weekend. A flat rate of $16 applies to standard shipping. At this time, we cannot ship to PO boxes or APO addresses.

Returns

Because our products are perishable, we cannot accept returns. If your order arrives in less than ideal condition or something is not as expected, please contact us and we will review your concern with care.
